Birria con Menudo

This hearty Mexican dish combines the rich, spiced broth of birria with tender menudo, made from beef ribs, shank, and honeycomb tripe. Simmered in a vibrant chile-based salsa with warm spices, it’s traditionally served with onion, cilantro, lime, and tortillas—perfect for family gatherings or a satisfying weekend meal.

Ingredients

Ingredients for Salsa:
5 guajillo chiles, soaked
7 ancho chiles, soaked
5 cascabel chiles, soaked
5 morita chiles, soaked
c/n water
4 allspice
½ tsp cumin
¼ tbsp oregano
3 garlic cloves
¼ white onion
2 bay leaves
¼ cinnamon stick
¼ cup apple cider vinegar
c/n salt

Ingredients for Main Dish:
2 lbs beef ribs
2 lbs beef shank
2 lbs Cut Beef Honeycomb Northgate®
c/n onion
c/n cilantro
c/n lime juice
c/n tortillas

Directions

1. Blend guajillo chile, ancho chile, cascabel chile, morita chile, allspice, cumin, oregano, garlic, onion, bay leaves, cinnamon stick, apple cider vinegar, water, and salt. Set aside.
2. Cook beef ribs, beef shank, and Cut Beef Honeycomb Northgate® in a pressure cooker. Pour in the salsa and cook for 1 hour.
3. Serve the birria with menudo with onion, cilantro, and lime juice.
