Rajas Tamales

Tamales de Rajas

A traditional Mexican dish made with fluffy corn masa, filled with roasted poblano peppers (rajas), creamy cheese, and sometimes a hint of tomato or onion. Wrapped in a corn husk and steamed to perfection, it offers a deliciously savory and mildly spicy flavor, perfect for any occasion.

Ingredients

Vegetable oil
½ lb Onion (sliced)
2 Garlic cloves (chopped)
½ lb Jalapeño peppers (strips)
5 Tomatoes (cubes)
2 Epazote leaves
1 pinch Cumin
1 tsp Oregano
1 pinch Pepper
c/n Salt
c/n Corn husks
2 lbs Prepared Masa for Tamales Northgate®
c/n Fresh cheese (cubes)
c/n Corn husks (soaked)
c/n Chocolate atole (to serve)

Directions

1. Heat the oil in a pan over medium heat and sauté the onion and garlic. Add the jalapeño peppers and cook for 5 minutes.
2. Add the tomatoes and cook over low heat for 10 minutes. Season with salt, pepper, cumin, oregano, and epazote.
3. Spread two tablespoons of masa on a corn husk, add rajas and cheese, and wrap the tamal. Repeat the process until you have no ingredients left.
4. Place the tamales in a steamer and cook over medium heat for one hour.
5. Serve the tamales with a cup of chocolate atole.
