1. Blend guajillo chile, ancho chile, cascabel chile, morita chile, allspice, cumin, oregano, garlic, onion, bay leaves, cinnamon stick, apple cider vinegar, water, and salt. Set aside.
2. Cook beef ribs, beef shank, and Cut Beef Honeycomb Northgate® in a pressure cooker. Pour in the salsa and cook for 1 hour.
3. Serve the birria with menudo with onion, cilantro, and lime juice.
